Zero Waste restaurant Silo, which was shortlisted for the World Restaurant Awards 2019, is heading to London.
Silo, launched by former St John chef Douglas McMaster, started as a pop-up in Australia in 2012. A branch of the restaurant opened in Brighton 2 years later.
The greens: Silo works with local producers who deliver seasonal produce directly in re-usable crates, cans, containers and urns. Any uneaten food goes into an aerobic digester which can produce 60kg of compost in just a few hours. Silo the offers it to residential and commercial neigbours so that the local community shares the benefits of waste reduction.
Worth knowing: Douglas McMaster will also run workshops and talks on sustainability in hospitality.
